Food Truck Owner Gears Up for Historic Hurricanes Victory Parade

As downtown Raleigh prepares to host a massive gathering for the Carolina Hurricanes' Stanley Cup victory celebration, one local food truck owner is getting ready to serve an enthusiastic crowd during this momentous occasion. The parade will make its way along Hillsborough Street, concluding at City Plaza with a rally, prompting street closures in the area.

Marcus Jenkins, the proprietor of the Spud Kings food truck, expressed his excitement about participating in what he believes to be an unparalleled event. "I bet this is probably the biggest event that I've ever been a part of," Jenkins remarked, highlighting the significance of the celebration.

With less than two days to prepare, Jenkins is busy gathering supplies to cater to what he anticipates will be a large influx of fans. "Oh, we do fresh-cut French fries. So we're going to need boxes and boxes of potatoes. We do cheese. We're going to need bacon. We need steak because we do loaded French fries," he explained.

Jenkins feels fortunate to be among approximately 30 food trucks positioned near Davie Street for the rally, calling it a once-in-a-lifetime opportunity. "I could never in a thousand years have imagined this would happen the way that it did," he stated. He has prepared extensively for a bustling weekend, which includes other celebrations and a food truck rodeo, stocking up on 600 pounds of potatoes alone. He anticipates that this weekend could contribute around 10% of his annual revenue.

Beyond the financial aspect, Jenkins cherishes the historical significance of the event. He reminisced about the Hurricanes' last championship victory two decades ago, recalling that he was in college at the time. "So I'm excited about this Stanley Cup that they're bringing back home to Raleigh," he said, looking forward to the festivities. As his family has supported the team throughout its playoff journey, Jenkins hopes to celebrate in his own special way, adding, "If they bring over the Cup, we'll load it with fries."

City officials are expecting this parade to potentially be one of the largest in Raleigh's history, drawing thousands to the downtown area for the jubilant celebration.
